Serves 8 as a side, or 4 as a main veggie in your meal
Prep: 30 min marinate + 5 minutes to mix, refrigerate to blend flavors better – great next day….if it LASTS that long!   In our family, I commonly triple this recipe and I can be sure to have a few days of yummy salad to have on hand for a snack or meal.

3 cucumbers, peeled, sliced thin (use food processor or mandolin to make it quickly and easily)
salt
1T sugar
¼ c. hot water
¼t. red pepper flakes
4T white vinegar (for the purist), or apple cider vinegar “with the mother” for the probiotic benefits
2T minced red onion

Generously salt cucumber in colander, rest 30 min until SILKY.

Wring cucumber slices in clean dish towel, squeezing out as much liquid as possible.

Dissolve sugar in hot water, add red pepper flakes, vinegar, & onion.

Combine with dressing and refrigerate.   Enjoy!!
