Serves 6 Serve with Cauliflower Carrot Stir Fry

1c. plain nonfat yogurt
3T soy sauce
2t curry powder
4cloves minced garlic
1 ½” piece of peeled fresh ginger
2# skinless chicken breast, in 1″ cubes
cherry tomatoes, pepper chunks, onion wedges, zucchini slices, mushrooms

Place yogurt, soy sauce, curry powder, garlic, and ginger in blender and puree.
Marinate chicken with mixture 2 hours or overnight. Place chicken on skewers,
alternating with vegetables and grill or broil over medium heat for 7-10 minutes per side,
until cooked through. Serve over rice
