

Chopped Cucumber Kale Salad

- 1 cucumber, peeled and chopped
- 3 stalks celery, chopped
- 2 large tomatoes (or 3 roma tomatoes), chopped
- 1/2 bunch scallions, chopped
- 1/2 bundle purple kale, finely chopped and massaged
- 1 avocado, pitted, peeled, and cubed
- 1 orange, juiced
- salt and pepper to taste
Chop all vegetables and mix together in bowl. Juice orange, pour over, salt and pepper, and stir to coat. Enjoy!
