

Prep: 25 minutes
1 C carrots, shredded or julienned
2 C rice sticks (2 sheets)
2 C cucumbers, julienned
1 C minced scallions
1 C any or all of julienned: turnip, kale, jicama, swiss chard, bok choy
1/4 C any or all of: chopped fresh cilantro, parsley, mint, basil
2 T toasted sesame seeds
1/4 C raw or toasted chopped almonds
16 rice paper wrappers
Lime Vinaigrette
3T lime juice
2T rice vinegar
1t sugar
2.5t chili garlic
1/4c extra virgin olive oil
1T fish sauce (optional)
1t minced garlic
1t sesame seed oil
*mix ingredients together and serve alongside sauce choices at table
This is a table side create-your-own dish. Prepare vegetables, seeds, meat, nuts, herbs
as listed above and place in separate bowls. Place rice sticks in bowl of hot water for
10 minutes to soften, drain. Mix up lime vinaigrette and place in small pitcher or bowl
with spoon.
To serve: Place all ingredients at the table. Place a bowl of hot water large enough to
accommodate rice paper wrappers. To create a wrap, place rice paper wrapper in hot
water until fully softened and remove to plate. Add ingredients of choice off center on
softened rice paper, wrap snugly like a burrito. Serve with Lime Vinaigrette, Hoisin
Sauce, or Korean Barbecue Simmer Sauce to drizzle on top or before wrapped.
